Snowballs

Ingredients:

1/3 Cup Cream of Coconut (you can mix the coconut cream with heavy cream if you like)
1 Tbls unsalted butter
8 oz white chocolate, chopped into small pieces
1 Cup flaked coconut

Directions:
  1. heat Cream of Coconut in a saucepan, bring to a simmer.
  2. add butter, stir until melted.
  3. add chocolate, stir until melted and smooth.
  4. remove from heat and pour into a shallow bowl.
  5. cool, cover and refrigerate for about 2 hours until firm.
  6. roll mixture into 2 inch balls, roll in coconuts.
  7. chill until ready to serve.
