1/3 Cup Cream of Coconut (you can mix the coconut cream with heavy cream if you like)
1 Tbls unsalted butter
8 oz white chocolate, chopped into small pieces
1 Cup flaked coconut
Directions:
- heat Cream of Coconut in a saucepan, bring to a simmer.
- add butter, stir until melted.
- add chocolate, stir until melted and smooth.
- remove from heat and pour into a shallow bowl.
- cool, cover and refrigerate for about 2 hours until firm.
- roll mixture into 2 inch balls, roll in coconuts.
- chill until ready to serve.
